Raw Vegan Cashew Cheesecake

Ingredients:

Crust:

1 1/2 cups macadamia nuts (or combo macadamia and walnuts)
1/2 cup pitted dates
1/4 cup shredded, unsweetened coconut
1 pinch salt

Filling:

3 cups raw cashews, soaked for at least 5 hours (or overnight)
1/2 cup freshly squeezed lemon juice
1/2 cup maple syrup (or honey)
1/2 cup melted coconut oil
1 tbs. pure vanilla extract (get the non-alcoholic version if possible)
*a few tbs. filtered water or orange juice
*optional: a few drops doTERRA Wild Orange essential oil

*Optional topping:
1/2 cup fresh/frozen berries of choice
1 tbs. maple syrup
Juice of 1/2 orange
Zest of 1/2 orange

 

Method:

Crust:

Place the shredded coconut in the bottom of a pie pan and spread evenly (this will help the pie not to stick).

Place the rest of the crust ingredients in a food processor and process until crumbly and well-combined (but still airy).

Press the crust ingredients into the pie pan and form an even crust. Put this in the fridge/freezer until ready to fill.

Filling:

Place all of your filling ingredients into your food processor and process until creamy. Add the water or orange juice, but don't add too much! Just enough to get it a soft "yogurty" texture.

Pour mixture on top of your crust and spread evenly.
*NOTE: You can pour 2/3 of the mixture, then add 1/2 cup of thawed berries (then blend), then pour on top of your base cheesecake layer for even cooler presentation.

*Optional topping:

Wash the bowl of your food processor.

Place all topping ingredients into food processor and pulse until well-combined (but not soupy). Sprinkle evenly on top of the cheesecake base.

Freeze your cheesecake for at least a few hours, then thaw in the fridge until ready to eat. Enjoy!

Cell Reboot Green Juice

Ingredients:

1 cucumber, skinned
1 head red-leaf lettuce
4 stalks celery, de-stringed
1/2 lemon, de-rinded
1" hunk of ginger, skinned

Splash coconut water
Dash of spirulina

Method:

Juice the first five ingredients.

Place them in a jar or glass. Then add the coconut water and spirulina. Mix thoroughly and enjoy!

*If you don't have a juicer, then mix the first five ingredients in a blender with one cup filtered water. Then strain into a glass add the coconut water and spirulina and enjoy!

 

Watermelon Feta Arugula Salad with Balsamic Drizzle

Ingredients:

2-3 cups fresh baby arugula
2 cups fresh watermelon squares
1 1/2 cups squares of feta cheese
Balsamic vinegar for drizzling
Sea salt and pepper to taste

Method:

Arrange the arugula on a plate or serving platter.

Place the watermelon and feta chunks throughout your bed of arugula.

Drizzle with balsamic vinegar and salt and pepper to taste.

Serve and enjoy!

This dip makes a great appetizer or sharable party dish. Packed with fiber and low in carbsmakes it ideal for snacking without packing on the pounds. Enjoy!

Ingredients:

1 head cauliflower, chopped into florets
1-2 cloves garlic
1 tbs. tahini
2 tbs. olive oil
2 tbs. lemon juice
1/2 tsp. ground cumin
*optional: 1 drop doTERRA lemon essential oil
sea salt and ground pepper to taste

*Other great add-ins: chopped fresh thyme, chopped fresh rosemary, a pinch of lemon zest, or all of the above!

Method:

Steam the cauliflower and garlic until soft (about 10 minutes)

Place all ingredients into a blender or food processor and blend until smooth and creamy

Put the mixture in a bowl and allow to cool

Sprinkle with smoked paprika and a drizzle of olive oil

Serve with crackers, chips, or veggies (like cucumber, celery, peppers, zucchini, carrots, whateva!)

Ingredients:

1 cup frozen spinach
1/2 cup peeled cucumber chunks
1 cup strawberries, stemmed and chopped
Plus one strawberry chopped in half to garnish
3 tbs. hemp hearts, plus a few more for garnish
1 teaspoon Spirulina
1 cup nut/seed milk of choice (preferably homemade...I like Brazil nut milk in this recipe)
1/2 cup coconut water
*optional: 1/2 cup Rose tea or one more 1/2 cup coconut water
*if you want it sweeter add one pre-soaked date...I'm just trying to cut down on sugar

Method:

Place all ingredients, except for garnish berry and hemp hearts, into a blender and blend on high speed until smooth (about 1 minute).

Then pour into your favorite glass and garnish with remaining ingredients.

Sip and enjoy!

 

3-ingredient Paleo Naan Bread

Ingredients:

1/2 cup almond flour
1/2 cup coconut flour
1 cup full-fat coconut milk (make sure it's soft or well-blended before mixing)
*Optional: 1 pinch salt and/or ghee for frying

Method:

Place all the ingredients in a blender and blend until smooth.

*NOTE: if they battler is too think you can add a little water to reach desired consistency.

Heat a medium sized non-stick skillet to medium heat.

Depending on how large your want your naans, use a 1/4 cup measuring cup to pour little naans, or 1 cup for larger. You can pour half the batter in the pan for a really large naan, but it'll take a while to cook, and/or be pretty tricky to flip (unless you're a pro!). So be patient. :)

Flip when side one looks fluffy and firm, and allow the other side to cook for a couple minutes.

You can enjoy these with any Indian dish, make them as makeshift pancakes, or even use them as a base for flatbreads.

WARNING: These are addictive!

Ingredients:

2 cups almond flour
1/3 cup coconut flour
1/2 tsp. baking soda
1/4 tsp. salt

1/3-1/2 cup melted coconut oil
3 tbs. grade B maple syrup
1 tbs. vanilla extract

1/2 cup walnuts
1/2 cup chocolate chips (or carob chips if you're not into caffeine)...I prefer dark chocolate mini chips myself...

Method:

Preheat your oven to 325 degrees. Line 2 cookie sheets with cooking parchment.

Mix your dry ingredients in a bowl (the first four).

Mix your wet ingredients in a separate bowl (the next three).

Then add the wet mixture to the dry mixture and stir until combined.  

Then add the chocolate chips and walnuts and mix until evenly distributed. 

Form the cookies into little patties (you can use a tablespoon to get exactly the same amount of dough for each if you're a stickler for evenly sized cookies) and place them onto the parchment lined cookie sheets. Bake for about 13 minutes or until they're just browned. Allow to cool for 10 minutes before eating (yeah right! good luck with that!). Enjoy!

Ingredients:

1/2 gallon purified water
1/2 cucumber, sliced
1-3 sprigs fresh mint
1-2 drops doTERRA peppermint essential oil

Other variations:

1/2 gallon purified water
5 fresh strawberries, sliced
1/2 lime, sliced
Juice form 1/2 lime
1-3 drops doTERRA lime essential oil

or

1/2 gallon purified water
1/2 orange, sliced
Juice from 1/2 orange
3 drops doTERRA wild orange essential oil

Method:

Combine all ingredients in a 1/2 gallon mason jar (or divide between a couple containers). Shake to combine. Allow to chill for at least a few hours. Pour into a glass and enjoy!

Ingredients:

1 cup frozen spinach
1 cup raspberries, fresh or frozen and thawed, divided
2 tablespoons Solay Superfood Superfood Meal
1 teaspoon Solay Superfood Superfruit C
1 heaping tablespoon cashew butter (or 1 handful cashews)
5 drops stevia (optional)
2 cups water or nut/seed milk
1 tbs. hemp hearts

Method:

Place all ingredients, but for 1/4 cup raspberries and hemp hearts, in a blender and blend to smithereens!

Pour into a glass and add the remaining raspberries and hemp hearts. Enjoy!

*Note: you can also use 1 cup coconut water in place of 1 cup water and ditch the stevia if you'd prefer.

5-Taste Delicata Squash Rings

Sweet, tart, salty, spicy, and astringent! Allow all the flavors to tantalize your taste buds. This makes an excellent side dish.

Ingredients:

2 medium delicata squashes, scrubbed, cut into 1"-thick wedges or rings, seeded 7 tbs. extra-virgin olive oil, divided 1 1/2 tsp. powdered cumin seed, divided Sea salt, freshly ground pepper 2 tbs. fresh lime juice 1-2 drops doTERRA lemon essential oil 1-2 tbs. tahini (sesame seed paste) 1 little pinch powdered Chimayao chile powder or crushed red pepper flakes 1 tbs. fresh chopped mint (you could also use basil or another fresh herb of your choice, but mint is yummy!)

Method:

Preheat oven to 425°F.

Place squash on a rimmed baking sheet.

Toss the squash with 4 tbs. of olive oil and the cumin, then season the squash with salt and pepper. Toss until well-combined and roast for 25-30 minutes (time may vary depending on squash).

Meanwhile, whisk lime juice, essential oil, tahini, chile, and remaining olive oil in a small bowl to blend. Season to taste with salt and pepper.

Transfer squash to a platter. Gently toss the squash in the tahini mixture and sprinkle with the freshly chopped mint. Serve and enjoy!

Roasted Squash Bowls with Maple Spiced Yogurt

Ingredients:

1/2 of a roasted sweet winter squash (I used acorn)
1/2-1 cup full fat organic Greek yogurt
1 tbs. maple syrup (or more to taste)
1 drop doTERRA cinnamon or cardamom essential oil Handful of chopped pecans Pinch of cinnamon for garnish

Method:

Mix all of the ingredients but for the squash and pecans together. Place the spicy yogurt mixture in the squash half. Sprinkle with pecans and cinnamon. Enjoy!

Heirloom Tomato and Golden Plum Salad

Enjoy the best of summer with this spicy, sweet, savory salad!

Ingredients:

Salad: 2-3 cups fresh baby arugula, lightly tossed in olive oil 2-3 heirloom tomatoes of different colors, cut into 1/4-inch slabs and lightly salted 3-4 small golden (or purple) plums, cut into wedges 1/4 cup shelled pistachios, roughly chopped Pansies, marigolds, and/or fresh berries for garnish

Dressing: 1/4 cup grapeseed or mild olive oil Juice of 1/4 lemon 3 Tbs. balsmic vinegar 5 ripe blackberries 1 drop lemon doTERRA essential oil Salt to taste *Optional: 1/2 tsp. honey if you like sweeter dressing

Method:

Salad: Plate a small handful of arugula on a plate Stack a few slabs of heirloom tomato on the side of the arugula Top tomatoes with a few wedges of plum Scatter a few pistachios over the whole salad Salt to taste

Dressing: Place all dressing ingredients in a small food processor or blender and blend until smooth. Add a few berries or a little more oil to reach desired consistency.

Finish: Drizzle dressing over the salad. Adorn the plate with fresh flowers and berries for extra beauty and deliciousness. Bon apetít!

Simple Raw Brownie Bites

Chill these tasty bites for a chewy chocolatey treat!

Ingredients:

2/3 cup raw almonds 2/3 cup raw walnuts 1-2 tbs. almond butter Pinch of salt 3/4 cup pitted dates 1/3 cup unsweetened cocoa powder

*optional: 1 drop doTERRA wild orange essental oil and a little orange zest *optional: 1/2 tsp. vanilla extract *optional fun add ins: cacao nibs, paleo chocolate chips, coconut flakes, dried cherries or blueberries, cinnamon, cardamom

Method:

Place nuts, nut butter, and salt in a food processor and blend until they are finely ground.

Add the dates, cocoa powder (and vanilla, essential oils, spices, or other add-ins if using) to the bowl. Mix all ingredients until well combined. While the food processor is running, you can add a little water, a few drops at a time, to help the dough stick together.

Use your hands to form 1-inch (or littler) balls and place them in an airtight container. Allow them to chill for at least an hour (trust me, they're delicious cold!).

They will keep for up to a week. Bon apetít!

Spiced Peach Lassi

'Tis the height of peach season, and this recipes is a delightful way to partake. Slightly sweet, tart, cooling, and very nourishing, it's sure to please any palate.

Ingredients:

2 ripe yellow peaches, halfed and separated from their pits (discard the pits)
1/2 cup full fat plain organic Greek yogurt
1 pinch either powdered cardamom or cinnamon
1/4 cup coconut milk, coconut water, or water
1 drop doTERRA wild orange or tangerine essential oil
*optional: 1 tsp. honey or maple syrup or a few drops stevia to further sweeten
4 ice cubes

Method:

Place all of the ingredients in a high speed blender and puree until smooth.

Pour into a glass or two and enjoy!

Baby Kale Salad

Baby kale is slightly sweet and buttery, so best to keep it simple with fewer companion ingredients. Enjoy!  

Ingredients:

A few bountiful handfuls of fresh baby kale, washed *Optional: a few crumbles or shavings of a hard cheese like Pecorino or Parmesan 2-3 tbs. extra virgin olive oil Juice of 1/4 small lemon 1/2 teaspoon fresh rosemary, chopped 1 drop doTERRA lemon essential oil Salt and pepper to taste

Method:

Combine olive oil, lemon juice, lemon essential oil, rosemary, salt, and pepper in the bottom of your salad bowl. Whisk together.

Add the kale leaves and toss to coat.

Sprinkle with optional cheese.
