Blueberry Chickpea Muffins

Ingredients:

2 cups chickpea flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt

2 large eggs, lightly beaten
1/2 cup maple syrup
1/2 cup applesauce
1 tsp. vanilla extract
6 tbs. melted coconut oil
1 cup blueberries (fresh or frozen)

Method:

Preheat oven to 375F and lightly grease or line a muffin tin with liners.

In a mixing bowl, combine all dry ingredients and whisk together.

In a large bowl, combine egg, maple syrup, vanilla extract, apple sauce, and oil.

Pour dry ingredients into wet and stir until well combined.

Fold in the blueberries and optional walnuts.

Pour about 1/4 cup batter into each muffin cup and bake for 15-20 minutes, until tops are set and lightly browned.

Allow to cool on a wire rack before enjoying.

Watermelon Hibiscus Cooler

Ingredients:

2 cups freshly brewed hibiscus tea, cooled
*optional: add a bag of rose tea while it's brewing for added depth of flavor and a boost to your heart chakra.
4-6 squares of frozen watermelon
1-2 drops liquid stevia
*optional: 1 drop doTERRA Citrus Bliss essential oil
1 spring of fresh mint for garnish

*This recipe can be quadrupled for an amazing party drink on these HOT summer afternoons!

Method:

Allow the tea to cool fully.

Mix the stevia and essential oil in the bottom of a drinking glass/jar.

Add a splash of the tea and mix thoroughly.

Add your watermelon chunks and sprig of mint, then pour the remaining tea in. Give it a quick stir and enjoy!

Cell Reboot Green Juice

Ingredients:

1 cucumber, skinned
1 head red-leaf lettuce
4 stalks celery, de-stringed
1/2 lemon, de-rinded
1" hunk of ginger, skinned

Splash coconut water
Dash of spirulina

Method:

Juice the first five ingredients.

Place them in a jar or glass. Then add the coconut water and spirulina. Mix thoroughly and enjoy!

*If you don't have a juicer, then mix the first five ingredients in a blender with one cup filtered water. Then strain into a glass add the coconut water and spirulina and enjoy!

 

Heart Chakra Smoothie

 The colors for the heart chakra are green and pink, both featured in this delicious smoothie. Greens and cruciferous veggies support the heart on the physical level, while the colors green and pink vibrate at the same frequency as the heart chakra giving it added strength and vibrancy. Enjoy!

Ingredients:

1 cup frozen spinach
1/2 cup peeled cucumber chunks
1 cup strawberries, stemmed and chopped
Plus one strawberry chopped in half to garnish
3 tbs. hemp hearts, plus a few more for garnish
1 teaspoon Spirulina
1 cup nut/seed milk of choice (preferably homemade...I like Brazil nut milk in this recipe)
1/2 cup coconut water
*optional: 1/2 cup Rose tea or one more 1/2 cup coconut water
*if you want it sweeter add one pre-soaked date...I'm just trying to cut down on sugar

Method:

Place all ingredients, except for garnish berry and hemp hearts, into a blender and blend on high speed until smooth (about 1 minute).

Then pour into your favorite glass and garnish with remaining ingredients.

Sip and enjoy!

 

Summer Water

Have a hard time hydrating during the summer months? Just add some fruit, herbs, and a drop of essential oil, and voila! You've got yourself a delectable thirst quenching treat!

Ingredients:

1/2 gallon purified water
1/2 cucumber, sliced
1-3 sprigs fresh mint
1-2 drops doTERRA peppermint essential oil

Other variations:

1/2 gallon purified water
5 fresh strawberries, sliced
1/2 lime, sliced
Juice form 1/2 lime
1-3 drops doTERRA lime essential oil

or

1/2 gallon purified water
1/2 orange, sliced
Juice from 1/2 orange
3 drops doTERRA wild orange essential oil

Method:

Combine all ingredients in a 1/2 gallon mason jar (or divide between a couple containers). Shake to combine. Allow to chill for at least a few hours. Pour into a glass and enjoy!

Peachy Keen (Paleo) Porridge

Start your day with a protein packed and nourishing bowl of goodness!

Ingredients:

1/2 cup almond meal 2 tbsp. hemp hearts 2 tbsp. chia seeds 1/2 cup full fat coconut milk 1/4 cup filtered water pinch sea salt pinch or two of cardamom, cinnamon, or ginger powder, or 1/2 drop of the doTERRA essential oil counterparts)' 1 ripe peach *optional: honey, or maple syrup sweetened to taste *optional: 1 organic/pasture-raised egg

Method:

Warm the water and coconut milk in a saucepan over a medium heat.

Whisk in the chia seeds. Allow them to cook (and gel) for a few minutes.

Add in the almond meal and hemp hearts. Whisk until well-combined.

Whisk in the salt and spices and allow to simmer for a few more minutes.

*If adding an egg, break the egg in the porridge and whisk rapidly to ensure even distribution. Allow to simmer for a few more minutes.

*If adding sweetener, sweeten to taste and pour porridge into a serving bowl (or two).

Top the bowl(s) with fresh peach and a pinch of cardamom or cinnamon. Serve and enjoy!

Pick-Me-Up Green Juice

A little zingy, a little sweet, this veggie-based juice is a great way to revive yourself.

Ingredients:

2 medium carrots, tops chopped off 1/2 apple, cored and sliced into wedges 3 celery stalks, de-stringed 2.5 cups fresh spinach 1 inch hunk of fresh ginger, peeled 1/2 lemon, de-rinded 1 drop lemon essential oil *optional: up to 1/2 cup fresh, purified water

Method:

Place all ingredients but essential oil in your juicer. Juice. Place in a glass jar (with a lid) add your essential oil and optional water. Shake it up to mix it all together. Sip to your heart’s content!

Basil Grape Smoothie

It's toasty warm out there! Here's a nice cool smoothie recipe to help cool your jets.

Ingredients:

1 cup homemade almond milk 1/2 small avocado 1/4 cup pepitas (soaked for at least a few hours, if you've planned ahead) 1 large handful organic black seedless grapes Juice of 1/4 lime 1/2 drop doTERRA lime essential oil 5 basil leaves 1 handful blanched spinach

Method:

Put all ingredients into blender and blend to smithereens.

Serve and enjoy!

*Note: 1 whole drop of essential oil might be too much for the sensitive palate, so dip a clean toothpick in the lime oil, and stir it into the other ingredients before blending.

Celly's Celery Yum Juice

When in doubt, drink juice.

It's here, it's here! I had been in a period of mourning after giving away my juicer. You see, I thought my Vitamix blender would do the trick of making excellent juice. But alas, after months of adding filtered water and straining smoothy-ish concoctions, I realized that it just wasn't the same as drinking the silky smooth goodness of a freshly "juiced" juice.

And so, after many months of waffling, and many many hours of research, I decided to purchase another juicer. The following is the recipe for its inaugural juice.

According to Ayurveda, yoga's sister science, March is a good time to start gently cleansing the body. And while I DO NOT advocate intensive juice fasts (unless it is under very specific conditions), an occasional juice can be like a heaven sent sweeper of intestinal goo. Good things to favor in your juice, and other recipes, during the month of march are soothing diuretics such as celery. That's the base for this juice.

Most juicers extract the fiber from the fruits and veggies, so keep blood sugar from spiking, it's advisable to follow the 3:1 ratio. This means to juice three vegetables for every fruit. Feel free to add in any other fruits or veggies that sound good, but this combo is very tasty, and will help clear out your crud! Make sure to wash all your produce thoroughly. Enjoy!

Metabolism Booster Tea

Melt away the sludge in your gut with this spicy, sweet, tart brew!

This recipe was inspired by Joyful Belly Ayurveda.

According to Ayurveda, yoga's sister science which works with Nature to balance our bodily systems, lemon, honey, vinegar, and cayenne combine to create fat busting, digestion and metabolism boosting elixir.

Vinegar and lemon encourage bile from the liver and gall bladder into the gut. Bile helps the body to digest high-fat foods, which would otherwise linger in the digestive system making us feel akin to beached whales.

After spells of eating super rich and fatty foods (like the holidays, for example), it's great to give your belly a rest and break up any sludge in your digestive system. This combination of vinegar, lemon juice, honey, chili powder, doTERRA grapefruit oil, and water combines to help kick start your metabolism while cleansing your blood and lymphatic system.

Drink this special brew upon waking, a half an hour before meals, or sip slowly after meals. Enjoy it up to a few times a day between meals until you feel your pipes are sufficiently cleansed. Happy digesting!

1/8 Teaspoon apple cider vinegar

Pinch cayenne pepper

Juice of half a lemon

1 drop doTERRA grapefruit essential oil

1 Cup purified water

Method:

Heat the water until hot but not boiling.

Put the remaining ingredients into a mug and mix them together.

Add the hot water and stir until well-combined. Sip and enjoy the new sense of freedom in your digestive system. :)

Adding significant heat to honey both strips it of its vitamins, minerals, and enzymes while creating cellular toxicity. Homemade Coconut Milk (and Bonus Eggnog Recipe!)

Coconut milk is an excellent base for smoothies, chai, puddings, soups, and tons of other dishes and drinks. I've been a smidge obsessed with coconut products of late (see below for "benefits" of this lovely "nut). After spending way too much money on canned coconut milk, and trying to figure out how to avoid canned foods (BPA, a pretty icky, hormone-disrupting toxin found in the lining of most cans is worth avoiding when possible. Check this out if you'd like to learn more), I realized that it would be extremely easy, healthful, and cost effective to make my own.

For those avoiding dairy and nuts, this is a lovely milk replacement, and can be used in any recipe that calls for milk. Hope you enjoy!

Ingredients:

1 1/2-2 cups shredded, unsweetened coconut 4 cups water Pinch sea salt

Other optional ingredients: 1 teaspoon vanilla extract, 1-2 pitted medjool dates 1 cup of berries of your choice 1 teaspoon honey and some spices like cardamom, nutmeg, or turmeric 1 teaspoon honey and a drop of your favorite doTERRA essential oil such as wild orange, peppermint, cinnamon, black pepper, etc.

Method:

Place all ingredients in a high speed blender.

Begin blending on low speed, then switch to high speed. Blend for at least two minutes, or until the milk is creamy.

Use cheesecloth, a nut milk bag, or a strainer to strain (collecting the pulp for future use) into a large jar.

Keep the coconut milk in the fridge for up to 4 days for best flavor and texture.

*Note: it could separate, so just shake it up before use for the best flavor and texture.

*Note: You can also heat the water (not boil!) before blending to help release the creaminess of the coconut. Try it both ways and see if you can taste/feel a difference.

*Note: You can use the reserved coconut pulp for all kinds of recipes, including smoothies, puddings, pancakes, soups, sauces, etc. Try adding it to this Blueberry Chia Pudding recipe.

To Make Raw and Dairy Free Eggnog:

Ingredients:

2 cups coconut milk

1 teaspoon organic vanilla extract

4 egg yolks (pastured farm-fresh eggs preferred)

2-4 tablespoons maple syrup

1 teaspoon ground cinnamon or 1 drop doTERRA cinnamon oil

1 teaspoon ground nutmeg (freshly grated, if ya got it)

1/8 teaspoon ground allspice

Method:

Combine all ingredients in a blender or food processor.

Process on high speed for 2 minutes until egg yolks are fully incorporated.

Serve chilled. (If you are a partaker of “spirits,” add a splash of spiced rum or bourbon.)

Add some freshly grated nutmeg on top, and voilá! Holiday cheer in a cup!
